A protein packed plant based treat for the ages: Vegan Buckeye Brownies

I haven’t done recipes here much, but I am an expert at veganizing everything and anything you could think of. If you ever have a request, send me a message or a comment and I will tell you how to make whatever your heart desires in it’s next completely plant-based form.

Today, however, you are going to get my recipe for the best, extremely decadent, protein packed, all natural, plant based Buckeye Brownies. If you are allergic to peanuts, just skip the peanut butter all together and make regular fudgy brownies.

Ok, are you ready for it? It’s going to seem crazy, but your main ingredient is a can of organic black beans. You would never imagine, but this is another tried and true absolute favorite at our house and I guarantee you will love them too.

First, preheat your oven to 350 degrees.

Ok, so if you want to make a small batch just then use just one 15 oz can of organic black beans, rinse well, and put it into your Ninja all in one blender food processer. (You can do this by hand as well, but it’s a lot more time consuming and you need to use a lot of elbow grease). Here’s the one we use daily:


So, you have your beans, now the list of ingredients to add to the blender are:

  • 1/2 cup unsweetened Hershey’s Cocoa powder


  • 1 cup of Organic Vermont Pure Maple Syrup


  • 1 Flax “egg” (1tbs flax meal mixed with one tbs water – let sit for 2 minutes to thicken before adding it to the processor)
  • 1 cup water
  • 1/2 cup all purpose flour ( I’ve left this part out before because I’m sensitive to wheat, but either way they turn out great)
  • 1/4 tsp baking powder
  • 1/4 tsp sea salt
  • 1 tsp pure vanilla extract
  • 1 Cup dairy free chocolate chips (I use Enjoy Life mini semi-sweet chips)


Now, process all of these in your Ninja until it is super smooth, (besides the chocolate chips, they can still be chunky 😋)

For a small batch like this use an 8 x 8 glass baking pan, and I always spray mine with the avocado oil spray that I’ve recommended before. Just in case, here it is again:


After you have poured all of your batter in your sprayed 8×8 pan, 

  1. Bake for 20-25 minutes until you can insert a toothpick into the center and it comes out clean.
  2. While the brownies are baking place 1 cup smooth organic peanut butter and 1/4 cup organic powdered sugar into a medium bowl and mix together until fully incorporated.



  1. When the brownies are finished and cooled, spread the peanut butter mixture evenly on top.
  2. Next prepare the chocolate layer by placing 1cup of the chocolate chips and 2 tbs almond milk (or whatever plant based milk you prefer) in a microwave safe bowl and cook for 30 seconds at a time, mixing frequently until the chocolate chip mixture is fully melted and smooth.
  3. Pour the melted chocolate on top and spread evenly across the peanut butter layer.
  4. Let cool in the fridge until the chocolate has solidified and serve!

THIS, my friends, is the best vegan buckeye brownie recipe I have ever made, and I can’t make them often because if I do, I will end up eating the whole pan by myself.

It is full of protein and although I try to avoid sugar, this treat used organic and natural sugar. So, even though it is a treat, each serving is packed full of nutrients and protein.
